Grilled Courgette, Chickpea & Feta Salad
A light, flavourful salad featuring smoky grilled courgette, hearty chickpeas and tangy feta. Perfect for when you need a zippy, refreshing summer bite.

Ingredients:
2 courgettes
1 can chickpeas (drained)
a bunch of parsley (chopped)
150 g feta (crumbled)
½ lemon (juiced)
extra virgin olive oil
salt & pepper
Recipe:
- Halve the courgettes lengthwise and use the tip of a knife to cut some zig-zag grids into the flesh. Drizzle with olive oil and season with a pinch of salt and pepper.
- Place a grill pan over a medium-high heat, and wait for the pan to heat up.
- Add the courgettes to the grill cut side down. Cook until golden brown (about 5 minutes), then flip the courgettes onto the other side and cook for another 5 minutes, until tender.
- Remove the courgettes from the pan and cut into chunks. Add to a large mixing bowl along with the chickpeas, parsley, feta and lemon juice, plus a drizzle of olive oil and a pinch of salt and pepper. Toss well to coat and enjoy.
How to store
Store in an airtight container in the fridge for up to 3 days.
