Quick Tomato & Coriander Salad

A simple, speedy combo of sweet tomatoes, tangy lime juice and delightful fresh coriander.

Substitutes? 

  • No cherry tomatoes? Use any tomatoes you have on hand. 
  • No fresh coriander? Use fresh parsley or rocket instead. 
  • No limes? Swap in lemon.
  • No red onion? Use shallot or spring onions instead.

Ingredients:

300 g cherry tomatoes (halved)

½ red onion (thinly sliced)

4 tbsp fresh coriander (chopped)

1 lime (juiced)

2 tbsp extra virgin olive oil

salt & pepper

Recipe:

  1. Add the tomatoes, red onion, coriander, lime juice and olive oil to a large bowl, along with a pinch of salt and pepper. Mix well to coat and enjoy!
