Sweet Bite Pepper Breakfast Egg Bites

- No sweet bite peppers? Use red pepper instead.

Ingredients:
3 Sweet bite peppers (diced)
2 tbsp parsley (chopped)
1 tsp smoked paprika
salt & pepper
6 eggs
1 tbsp olive oil
Recipe:
- Preheat the oven to 180C/160C fan/gas mark 4.
- Crack the eggs into a mixing bowl. Add the sweet bite peppers, parsley, paprika, eggs and a generous pinch of salt and pepper. Mix until combined.
- Place a muffin tin on a large baking tray. Grease the muffin tin with olive oil and divide the egg mixture between 8 muffin slots.
- Bake for 15 minutes, then remove from the oven and set aside to cool. Dish up whenever you're ready and enjoy.

Store in an airtight container in the fridge for up to 3 days, or in the freezer for up to 2 months.
